In Nederland hebben we zout met 0,6% Nitriet met de naam Colorozo.
Recepten zijn vaak om te zetten naar Colorozo of andersom.

How do you use Colorozo for making Italian salami?, there is no nitrate in it so the process of the nitrate converting to nitrite and then to nitric oxide does not happen, nitrate is there for long term break down to nitrite?

Not correct, colorozo has no nitrate, only nitrite!
Cure#2 has nitrate, but that is not allowed in Europe.
You can use salpetre.. But the butchers use only colorozo.
